What is cinnamon?

Cinnamon is a spice that derives from the bark of the Cinnamomum tree. The bark is harvest, then dried. This then produces curls, which are commonly known and recognised as cinnamon sticks. Ceylon cinnamon is harder to find than its alternative Cassia cinnamon and is slightly sweeter.

What’s the difference between Cassia cinnamon and Ceylon cinnamon?

Cassia Cinnamon comes from the Cinnamomum cassia tree, also called Cinnamomum aromaticum. Cassia cinnamon is considered lower quality. It is very cheap and is the type most commonly consumed around the world. Almost all cinnamon found in supermarkets is the cassia variety.

Ceylon Cinnamon, or "true cinnamon" instead, is made from the inner bark of the Cinnamomum verum tree. Ceylon cinnamon is less common and quite expensive compared to the more common cassia variety.
